Began his professional career in 1981 at the Les Trois Mailletz Jazz Club in Paris.

Since then, he has performed in numerous Paris jazz clubs, including Les Trois Mailletz, Le Caveau de la Bolée, Le Caveau de la Huchette, Le Village, Le Slow Club, Le Bilboquet, L'Alliance Saint-Germain (formerly Latitudes Saint-Germain), Le Petit Journal Montparnasse, and Le Petit Journal Saint-Michel, as well as at various jazz clubs throughout France—including Le Pêle-Mêle (Marseille) and Les 5 Rues (Megève)—and internationally.

He has appeared at the following jazz festivals:

He has also shared the stage with renowned musicians such as Fabrice Eulry (piano duets), Marc Fosset, Jean-Loup Longnon, Zanini, Patrice Caratini, Pierre Boussaguet, and acclaimed jazz vocalists including Anne Ducros, Gilda Solves, Sarah Lazarus, Marie-Annick Saint-Céran, and others.

In addition to his jazz career, he has worked in the French popular music scene, accompanying Dany Brillant during television appearances.

He performs regularly with his own ensemble, the Ahmet Gülbay Trio, featuring Philippe Le Van on drums and Christophe Le Van on double bass.
